Dried chili

There are two types of dried chilies in Thai curries: hot chili and spur chili. To prepare red curry, kaeng khua curry, phanaeng curry as well as steamed curried mousse (hor mok), dried spur chili is used since it gives a bright red color with mildly hot flavor. Dried hot chili, however, is more popular in jungle curry because of its hotter taste. Select the dried chili which is bright red without black spot or mould is suggested.
