Red Curry Paste (Make 1/2 cup)

Ingredients
5 dried spur chilies, seeded and soaked until tender
1 teaspoon sea salt
1 teaspoon mature galangal, finely sliced
1 tablespoon lemongrass, sliced
1 teaspoon kaffir lime rind, finely sliced
2 teaspoons coriander root, sliced
10 cloves small garlic 1/3 cup shallot, sliced
1 tablespoon coriander seeds, roasted and ground
1 teaspoon cumin, roasted and ground
1 teaspoon shrimp paste

Preparation
In a mortar, finely pound the spur chili and salt together. Add the galangal, lemongrass, kaffir lime rind and coriander root. Pound finely. Add the garlic, shallot, coriander seed, cumin and shrimp paste. Continue pounding to a smooth paste.
