Green Curry Paste (Make 1/2 cup + 2 tablespoons)

Ingredients
3 tablespoons green hot chilies
5 green spur chilies, sliced
1 teaspoon sea salt
1 teaspoon mature galangal, finely sliced
1 tablespoon lemongrass, sliced
1/2 teaspoon kaffir lime rind, finely sliced
1 teaspoon coriander root, finely sliced
2 tablespoons small garlic, peeled
1/4 cup shallot, sliced
5 peppercorns
1 tablespoon coriander seeds, roasted and ground
1 teaspoon cumin, roasted and ground
1 teaspoon shrimp paste

Preparation
In a mortar, finely pound both kinds of chili with salt. Add the galangal, lemongrass,
kaffir lime rind and coriander root. Pound well. Add the garlic, shallo , percorns, coriander seed, cumin and shrimp paste. Pound to a smooth paste.
