Mussamun Curry Paste (Make 1/2 cup)

Ingredients
3 dried spur chilies, seeded and soaked until tender
1 teaspoon sea salt
1 teaspoon mature galangal, sliced and roasted
1 tablespoon lemongrass, sliced and roasted
2 bulbs garlic, grilled and peeled
5 shallots, grilled and peeled
1 tablespoon coriander seeds, roasted and ground
1 teaspoon cumin, roasted and ground
2 cloves, roasted and ground
1 teaspoon pepper
1 teaspoon shrimp paste

Preparation
In a mortar, finely pound the spur chili and salt together. Add the galangal and lemongrass, pounding well. Add the garlic, shallot, coriander seed, cumin, clove, pepper and shrimp paste. Continue pounding to a smooth paste.
