Yellow Curry Paste

Ingredients
(Make 1/; cup)
3 dried spur chilies, seeded and soaked until tender
1 teaspoon sea salt
1 teaspoon ginger, finely sliced and roasted
1 teaspoon mature galangal, finely sliced and roasted
1 tablespoon lemongrass, sliced
5 shallots, grilled and peeled 10 cloves small garlic, grilled and peeled
1 tablespoon coriander seeds, roasted and ground
1 teaspoon roasted cumin, ground
2 teaspoons curry powder
1 teaspoon shrimp paste

Preparation
In a mortar, finely pound the spur chilli and salt together. Add the ginger, galangal and lemongrass, pound well. Add the shallot and garlic, pound thoroughly. Add the coriander seed, cumin, curry powder and shrimp paste. Continue pounding to a smooth paste.
